Wash the zucchini, eggplant, tomato and bell peppers and cut into pieces. Peel the onion and cut into cubes. Peel the garlic and chop the herbs.
Heat the olive oil in a pan and add the onion and bell pepper. Sautèe for a couple minutes and add rest of the vegetabes. Press the garlic through a press and add the tomato paste and herbs and heat for a short while. Finally add the vegetable broth and heat for about 20 minutes over medium heat.
