Zutaten

  • 1 small eggplant
  • 1 small zucchini
  • 1 onion
  • 1 red & 1 yellow bell pepper
  • 1 big tomato
  • 2 cloves garlic
  • olive oil
  • 2 tbsp tomato paste
  • 100 ml vegetable broth
  • basil, oregano, rosemary
  • salt & pepper

Anleitungen

  • Wash the zucchini, eggplant, tomato and bell peppers and cut into pieces. Peel the onion and cut into cubes. Peel the garlic and chop the herbs. 
  • Heat the olive oil in a pan and add the onion and bell pepper. Sautèe for a couple minutes and add rest of the vegetabes. Press the garlic through a press and add the tomato paste and herbs and heat for a short while. Finally add the vegetable broth and heat for about 20 minutes over medium heat.
